Ingredients:
For the Fries:
4 large russet potatoes, peeled
4 cups vegetable oil, for frying
Salt, to taste
For the Gravy:
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
2 cups beef broth
1 tablespoon soy sauce
1 teaspoon Worcestershire sauce
Salt and pepper, to taste
For the Toppings:
2 cups cheese curds (preferably white cheddar)
Directions:
Prepare the Fries:
Cut the peeled potatoes into thin strips.
Rinse the potato strips in cold water to remove excess starch, then pat them dry with a paper towel.
Heat the vegetable oil in a large, deep skillet or fryer to 350°F (175°C).
Fry the potato strips in batches, without overcrowding, until golden and crispy, about 3-4 minutes per batch.
Remove with a slotted spoon and drain on paper towels. Season with salt immediately.
Prepare the Gravy:
