Ingredients:

2 tablespoons olive oil
1 medium onion, chopped
2 cloves garlic, minced
2 cups pumpkin puree
2 cups vegetable or chicken broth
1 cup pumpkin ale
1/2 cup heavy cream
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground ginger
Salt and pepper to taste
Fresh parsley or chives, for garnish

Directions:

Heat olive oil in a large pot over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
Add the minced garlic and cook for an additional minute until fragrant.
Stir in the pumpkin puree, vegetable or chicken broth, and pumpkin ale. Bring the mixture to a simmer.
Reduce the heat and let the soup simmer for 15-20 minutes to blend the flavors.
Stir in the heavy cream, ground cinnamon, nutmeg, and ginger. Season with salt and pepper to taste.
Use an immersion blender to puree the soup until smooth, or blend in batches using a standard blender.
Return the soup to the pot, heat through, and serve hot, garnished with fresh parsley or chives.
