Ratatouille recipe, a flavorful French vegetable dish made with seasonal produce:

Ingredients:

1 eggplant, thinly sliced

1 zucchini, thinly sliced

1 yellow squash, thinly sliced

1 red bell pepper, thinly sliced

1 yellow bell pepper, thinly sliced

4 tomatoes, thinly sliced

1 onion, finely chopped

2 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon dried thyme

1 teaspoon dried basil

Salt and black pepper to taste

Fresh basil for garnish

Directions:

Preheat the Oven:

Preheat your oven to 375°F (190°C).

Prepare the Base:

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Sauté the chopped onion and minced garlic until softened and translucent.

Layer the Vegetables:

Spread the sautéed onion and garlic mixture evenly at the bottom of a baking dish. Arrange the sliced eggplant, zucchini, yellow squash, bell peppers, and tomatoes on top in an alternating pattern, slightly overlapping each slice.

Season and Drizzle:

Sprinkle the layered vegetables with dried thyme, basil, salt, and pepper. Drizzle the remaining tablespoon of olive oil over the top.

Bake:

Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes. Then, remove the foil and bake for an additional 20-25 minutes, or until the vegetables are tender and slightly browned around the edges.

Serve:

Garnish with fresh basil before serving. Ratatouille can be enjoyed hot, warm, or at room temperature, making it a versatile dish for any meal.
