Roasted Garlic-Parmesan Zucchini, Squash, and Tomatoes
Ingredients:
2 medium zucchinis, sliced
2 medium yellow squashes, sliced
1 pint cherry tomatoes, halved
3 cloves garlic, minced
1/4 cup olive oil
1/2 cup grated Parmesan cheese
1 teaspoon Italian seasoning
Salt and pepper to taste
Fresh basil, chopped (optional, for garnish)
Directions:
Preheat the oven to 400°F (200°C).
In a large bowl, combine the sliced zucchini, squash, and cherry tomatoes.
Drizzle the vegetables with olive oil and add minced garlic, Italian seasoning, salt, and pepper. Toss until the vegetables are evenly coated.
Spread the vegetables in a single layer on a large baking sheet.
Sprinkle the grated Parmesan cheese over the top of the vegetables.
Roast in the preheated oven for 25-30 minutes, or until the vegetables are tender and the Parmesan is golden and crispy.
Remove from the oven and garnish with fresh basil if desired. Serve immediately.
