Rum Cake 🍰
Ingredients:
For the Cake:
1 cup butter, softened
1 cup granulated sugar
1 cup brown sugar, packed
4 large eggs
1/2 cup dark rum
1/2 cup milk
1 teaspoon vanilla extract
2 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
For the Glaze:
1/2 cup butter
1 cup granulated sugar
1/4 cup water
1/2 cup dark rum
Directions:
Preheat your oven to 350°F (175°C). Grease and flour a 10-inch bundt pan.
In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy. Beat in the eggs one at a time, then stir in the dark rum, milk, and vanilla extract.
In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
Pour the batter into the prepared bundt pan and smooth the top. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
While the cake is baking, prepare the glaze. In a saucepan over medium heat, melt the butter. Stir in the sugar and water, and bring to a boil. Reduce heat and simmer for 5 minutes. Remove from heat and stir in the dark rum.
When the cake is done, let it cool in the pan for 10 minutes before inverting onto a serving plate. Brush the warm glaze over the cake, allowing it to soak in. Let the cake cool completely before serving.
