Russian-Style Cheese Pancakes (Syrniki) Served with sour cream and raspberry jam

Ingredients:

1 lb (450g) farmer’s cheese or ricotta (drained if watery)
2 large eggs
3 tablespoons sugar
1 teaspoon vanilla extract
A pinch of salt
1/2 cup (60g) all-purpose flour (plus extra for dusting)
1 teaspoon baking powder (optional, for fluffier pancakes)
Vegetable oil or butter for frying

To Serve:

Sour cream
Raspberry jam
Fresh berries (optional)

Instructions:

Prepare the Cheese Mixture: In a large bowl, combine the farmer’s cheese, eggs, sugar, vanilla extract, and salt. Mix well until smooth. If your cheese is a bit chunky, you can mash it with a fork.

Add Dry Ingredients: Add the flour and baking powder (if using) to the cheese mixture. Stir until a soft dough forms. The dough should be sticky but manageable. If it’s too wet, add a little more flour.

Shape the Syrniki: Dust your hands and a work surface with flour. Divide the dough into equal portions (about 2 tablespoons each). Roll each portion into a ball, then flatten slightly to form small, thick patties.

Cook the Syrniki: Heat oil or butter in a large skillet over medium heat. Fry the pancakes in batches, cooking each side for 3-4 minutes until they turn golden brown and crispy. Adjust the heat if they brown too quickly.

Serve: Serve the hot syrniki with a dollop of sour cream and a generous spoonful of raspberry jam on the side. You can also add fresh berries for an extra touch.
