Santa Maria-Style BBQ Tri-Tip 🥩
Ingredients:
2-3 lb tri-tip roast
2 tablespoons olive oil
4 cloves garlic, minced
1 tablespoon salt
1 tablespoon black pepper
1 tablespoon paprika
1 tablespoon onion powder
1 teaspoon cayenne pepper
1 teaspoon dried oregano
1 teaspoon dried rosemary
1/2 teaspoon ground mustard
1/4 cup red wine vinegar
1/4 cup Worcestershire sauce
Directions:
Prepare the marinade: In a small bowl, combine olive oil, minced garlic, salt, black pepper, paprika, onion powder, cayenne pepper, oregano, rosemary, and ground mustard. Rub this mixture all over the tri-tip roast, then place the roast in a large resealable plastic bag. Pour in the red wine vinegar and Worcestershire sauce. Seal the bag and marinate in the refrigerator for at least 4 hours, preferably overnight.
Preheat the grill: About 30 minutes before grilling, remove the tri-tip from the refrigerator and let it come to room temperature. Preheat your grill to medium-high heat, around 400°F (200°C).
Grill the tri-tip: Place the tri-tip directly over the heat and sear for 5-7 minutes on each side, creating a nice crust. Then, move the tri-tip to indirect heat and cook for an additional 20-25 minutes, or until the internal temperature reaches 130-135°F (54-57°C) for medium-rare.
Rest and slice: Remove the tri-tip from the grill and let it rest for 10 minutes before slicing. Slice against the grain into thin strips to ensure tenderness.
