Steak with Grilled Vegetables and Sauce that’s perfect for a hearty and healthy meal!

Ingredients:

For the Steak:

2 steaks (ribeye, sirloin, or your favorite cut, about 1-inch thick)
Salt and pepper to taste
1 tbsp olive oil
2 cloves garlic (smashed)
2 sprigs fresh rosemary or thyme (optional)
2 tbsp butter

For the Grilled Vegetables:

1 zucchini (sliced into rounds)
1 red bell pepper (cut into strips)
1 yellow bell pepper (cut into strips)
1 red onion (sliced into thick rings)
1 bunch asparagus (trimmed)
1 tbsp olive oil
Salt and pepper to taste
1 tsp balsamic vinegar (optional)
For the Sauce (Garlic Herb Butter Sauce):
1/4 cup unsalted butter
2 cloves garlic (minced)
1 tbsp fresh parsley (chopped)
1 tbsp fresh thyme (chopped)
1 tsp lemon juice
Salt and pepper to taste

Instructions:

  1. Prepare the Steak:
    Season the steaks generously with salt and pepper on both sides. Let them sit at room temperature for about 30 minutes before cooking.
    Heat olive oil in a cast-iron skillet or grill pan over high heat. Once the pan is hot, add the steaks and cook for 3-4 minutes on each side for medium-rare, or adjust the cooking time to your desired doneness.
    In the last minute of cooking, add butter, smashed garlic, and fresh herbs (if using) to the pan. Baste the steaks with the melted butter for extra flavor.
    Remove the steaks from the pan and let them rest for 5-10 minutes.
  2. Grill the Vegetables:
    While the steaks rest, toss the zucchini, bell peppers, onion, and asparagus in olive oil, salt, and pepper.
    Preheat your grill or grill pan to medium-high heat. Grill the vegetables for about 3-4 minutes on each side until they are tender and have grill marks. You can drizzle a little balsamic vinegar over them for extra flavor if you like.
    Remove the vegetables from the grill and set aside.
  3. Make the Garlic Herb Butter Sauce:
    In a small saucepan, melt the butter over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant.
    Stir in the chopped parsley, thyme, lemon juice, salt, and pepper. Remove from heat once the herbs are well combined, and the sauce is slightly thickened.
  4. Serve:
    Slice the steaks and arrange them on a plate with the grilled vegetables. Drizzle the garlic herb butter sauce over the steak and vegetables.
    Garnish with extra fresh herbs if desired.
