Strawberry Parfaits, perfect for a light dessert or snack!

Ingredients:

  • 2 cups fresh strawberries (sliced)
  • 2 tbsp sugar (or honey)
  • 1 tsp lemon juice
  • 2 cups Greek yogurt (vanilla or plain)
  • 1 cup granola
  • Whipped cream (optional)
  • Fresh mint leaves (optional, for garnish)

Instructions:

1. Prepare the strawberries:

  • In a bowl, toss the sliced strawberries with sugar (or honey) and lemon juice. Let them sit for about 10-15 minutes to release their natural juices.

2. Layer the parfaits:

  • In clear glasses or dessert cups, layer 2-3 spoonfuls of yogurt at the bottom.
  • Add a layer of the sweetened strawberries, followed by a layer of granola.
  • Repeat the layers until you reach the top of the glass.

3. Top and garnish:

  • Finish with a dollop of whipped cream if desired.
  • Garnish with fresh mint leaves for an extra touch.

4. Serve:

  • Serve immediately, or refrigerate for up to an hour if you prefer a chilled parfait.
