Spicy Steak & Scallop Ramen
Ingredients:
8 oz steak, thinly sliced
8 oz scallops
2 packs of ramen noodles
4 cups chicken broth
2 tablespoons soy sauce
2 tablespoons miso paste
1 tablespoon sriracha sauce
1 tablespoon sesame oil
2 cloves garlic, minced
1-inch piece ginger, minced
2 green onions, sliced
1 cup baby spinach
1 soft-boiled egg, halved
Sesame seeds, for garnish
Fresh cilantro, for garnish
Directions:
In a large pot, heat the chicken broth over medium heat. Add the soy sauce, miso paste, and sriracha sauce. Stir well to combine.
In a skillet, heat the sesame oil over medium-high heat. Add the garlic and ginger, and sauté until fragrant.
Add the steak slices to the skillet and cook until browned, about 2-3 minutes. Remove from the skillet and set aside.
In the same skillet, add the scallops and cook for 2-3 minutes on each side until they are golden and cooked through. Set aside.
Cook the ramen noodles according to the package instructions. Drain and set aside.
Add the ramen noodles to the pot of broth, followed by the cooked steak and scallops.
Stir in the baby spinach and let it wilt.
Serve the ramen in bowls, topped with green onions, sesame seeds, cilantro, and half a soft-boiled egg.
